Brian moved to Vail in 1999 to pursue his culinary career. He found a spot at Splendido Restaurant in the Chateau in Beaver Creek. After just a year at Splendido, he moved to Sweet Basil, in August of 2000. Brian climbed his way up through the kitchen ranks, starting as a line cook and in September of 2004, was promoted to Sous Chef. In May of 2006, ‘Bobby’ as he is known, was promoted to Chef de Cuisine.

When the owners of Sweet Basil decided to pursue a new restaurant venture in the Fall of 2012, they tapped Brouillard to run the kitchen at Mountain Standard.  Brian’s skill set and passion lie directly in line with the honest, rustic, and from the heart cooking that is served at Mountain Standard.
